There has been a lot of talk lately about the unsung heros of our world - microbes. From replacing traditional fertilizers with
to producing
to your friendly neighborhood pickle making hipster it seems that talk of microbiology has left the lab... and it makes sense.
All of my favorite foods are created as a result of fermentation via microbes. Bread, beer, wine, cheese, kombucha, sauerkraut, coffee, tea and chocolate to name a few. Fermentation is also key in creating ethanol fuel, breaking down sewage and creating pharmaceuticals. So why haven't we seen this process used in cannabis?
The process of fermentation is the conversion of carbohydrates to alcohol and/or acetic and lactic acid. Humans have been doing this for centuries primarily for preservation but quickly thereafter for transformation. It is said that if cheese, among other foods, were created today it might not be approved due to food testing standards. And maybe this gets to the heart of the lack of innovation in regards to cannabis fermentation.
I have long thought that cannabis flower innovation needs a reboot. As I
the "new genetics" that seem to be dropping every week apparently aren't that different or potent according to third party lab tests. The focus on genetics
is
correct - the amount of people working on cannabis breeding nowadays will eventually lead to some truly new cultivars with unique traits. Until that day arrives the focus needs to shift to transformation. Over the next couple of months I will be documenting several techniques used to transform other products and see if they are applicable too cannabis. Stay tuned.
